Starbucks’ egg white bites are so popular that I wanted to find a way to make them at home! I found this food blogger The Girl on Bloor who has an amazing copycat recipe for this. I tweaked the mix ins as I really love the combination of cheddar and jalapeno. It lends the perfect savory notes and the creamy cheddar balances out all the spice from the jalapeno. These egg bites are customizable and you can add in any mix ins you like. This is just one of a million combinations you can make.
I’m always looking for new breakfast ideas and typically I go for more sweet breakfasts, I wanted to switch it up and attempt to make these Starbucks copycat recipes. It’s always fun to try to recreate a favorite fast food item at home. As I’m writing this, it’s pouring rain outside and will be raining for the rest of this week. It’s always during the rainy months that I love sitting at home and trying other food bloggers recipes.
Egg Bites Ingredients
- Egg Whites
- Cottage Cheese
- Cheddar Cheese
- Jalapeno
- Salt
- Pepper
- Olive Oil
You’ll also need a blender, a silicone tray and a 9×13 baking dish. I didn’t have a silicone tray so I ended up using a muffin tin instead. I love recipes where it all comes together in a blender!
It’s also important to bake this in warm water or sous vide as it helps create a creamy texture within the bites themselves.
After blending the egg whites and cottage cheese, you then pour the mixture into your muffin tray and top with whatever toppings you’d like. Then you heat it in the oven at 325 degrees fahrenheit for about sixty minutes. It’s important to check halfway through to ensure you don’t overcook the egg.
Some other toppings to include are:
- Spinach & Mushrooms
- Roasted Red Pepper & Sun Dried Tomato
- Onions & Bell Peppers
- Any kind of cheese
