Welcome back to Life Lately, the February edition! I am excited to recap what I’ve been up to in January and share my plans for February 2024 and life behind the scenes.
Life Lately: February 2024
January flew by, I can’t believe it’s already February! In early January I went on a girls trip to visit my best friend’s hometown in Oceanside, CA. It was a literal beach town filled with tall palm trees and endless In-N-Out. My first time trying In-N-Out was amazing, I loved their grilled cheese and animal style fries. If you’ve never been to California before, In-N-Out is a must! My friend and I spent a day in Carlsbad shopping, eating and exploring the town. We also spent a day in Los Angeles, went to Rodeo drive, erewhon, the grove and I even got to see a peak of the Hollywood sign. It was a long weekend trip filled with lots of food, relaxation and laughter. You can read more about my trip here.
Currently Eating
Long nights and winter months call for stick to the rib food, filling and hot.
Firstly, my go to lunch is my harvest salad, it is so filling.
Secondly, for dinner I want to ensure I am eating something warm and hearty that can still keep me full. I created a warm version of my harvest salad with the addition of basmati rice. First, I make a pot of rice, boil it, then add in caramelized onions, fried onions, pistachios, peanuts, dates and top it with a poppy seed dressing.
You get so much textures and flavor from this dish. There’s so many ways to make rice and this is by far my favorite rice dish. There is so much texture happening in this dish, you really get a little bit of everything.
Currently Watching
I am quickly making my way through Gossip Girl, I’m starting season five tonight and I must say I’m in for a ride. I love the slow budding friendship that is developing between lonely boy and B and you know anytime you see Georgina Sparks pop into town, you’re in for a hell of a ride. It is hard keeping up with these upper east siders, thankfully I can rely on gossip girl for all the tea. – xoxo Candice
Aside from Gossip Girl, I did see Mean Girls when I was in California and it was pretty good. I didn’t have any expectations going in to see it, but the musical numbers were entertaining. I do wish though they could have brought the original cast back for some nostalgia.
Life Behind the Scenes
I’ve been keeping busy with writing in my journal daily as well as coming up with blog post ideas. I recently painted my closet and added a small closet system to house all my dresses.
With the super bowl and Valentine’s Day coming up, I’m planning on sharing indulgent recipes and desserts for both days. I only watch the super bowl for the halftime show and the commercials.
For February and March, I’ll be focusing more on video creation as I want to explore different video concepts and learn special effects.
Nala
Nala is living like a queen as usual. She’s obsessed with catnip and loves doing zoomies and interrupting zoom calls. It’s like she has espn or something?
