pistachio cardamom butter

Pistachio Cardamom Butter

by Candice

Learn how to make pistachio butter at home with just two ingredients, pistachios and cardamom. It’s giving peanut butter a run for its money!

I have to say, I LOVE peanut butter! All throughout school I would eat just peanut butter sandwiches for lunch and surprisingly never got sick of it. I almost feel like I am betraying my loyalty to peanut butter. As my palette is changing I’ve recently been obsessed with making my own pistachio butter. My three favorite nuts of all time are peanuts, pistachios and pecans. In my eyes, pistachios are the queens of the nut world. It pairs so well with sweet and savory dishes.

I recently bought a jar of pistachio butter online and it actually ended up tasting more like nutella instead of pistachio. I instead tried to create my own pistachio butter at home that way I can actually tastes the pistachios. This recipe is similar to my homemade peanut butter recipe, however I decided to toast the pistachios first to release its oils and to enhance the flavor and I also added in cardamom because it pairs so well with pistachios.

Pistachio Cardamom Butter Ingredients

You’ll need pistachios, cardamom, a skillet and a food processor. It’s always best to use a food processor when trying to make any nut butter from scratch because the blades pulverizes the nut into different textures before it turns into a spreadable nut butter.

I recommend buying unsalted pistachios that way you can control the salt or can omit it entirely. One step that you must not skip is dry toasting it over a skillet – any time you toast nuts not only does it help release the oil which will make it easier for the food processor, it also deeply enhances the flavor of the pistachio that way when you taste the butter you get a rich scent of the pistachio.

For this recipe, I chose to add cardamom because it’s my favorite spice however it is optional and you can omit it or swap it with another warming spice.

You can eat this pistachio straight out of the jar with a spoon which is how I prefer to eat it or you can spread it on toast, add it to a dressing, or make pistachio butter cups!
