Stuffed Dates with Peanut Butter

These stuffed dates with peanut butter are the perfect energizing snack for fall and comes together in less than a minute! Since this isn’t really a recipe, I’m not putting a recipe card for this snack.

Firstly, these dates are the perfect vehicle to stuff anything in whether it be sweet or savory.

Medjool dates are naturally very sweet and can be found at your local grocery store. You can buy them with the pit or pitted, if you buy them with the pit make sure to take it out before you eat it.

Choose Your Own Adventure Dates

When it comes to stuffing your dates, it is a choose your own adventure. For me, I like to use peanut butter and top it with blueberries or any fruit. Any nut butter will work here or if you are allergic to nuts you can use a nut free butter or you can omit the butter entirely and stuff it with fruit or granola. You can also stuff it with shredded coconut, pistachios, chocolate chips – anything will work.

Medjool dates also have a caramel like taste to it and really is a versatile fruit.

Some of my favorite other ways to use dates are to turn them into a caramel sauce, it tastes just like caramel when you blend them together with warm water and makes the perfect dip for your apples! I’ve also used the “caramel” sauce to make healthy snickers replacing the actual caramel sauce with the “date caramel” and it actually tastes even better than the original snickers.

With fall quickly approaching, this snack is perfect as it contains protein from the peanut butter and fiber from the date. You don’t always need to use pumpkin to get your fall craving fix! While I do love pumpkin and am a sucker for pumpkin bread, it’s fun experimenting with different fruits and vegetables to create the perfect fall palette without overdoing it with pumpkin.
