This vegetarian Thai salad with peanut dressing is an explosion of flavors and textures. From the salty peanuts, to the sweet mangoes and savory peanut dressing, this truly is my go to salad in the summertime and not to mention so coloruful!
I love making salads during the summer, there is no cooking required it’s all about the prep work of chopping vegetables, tossing some ingredients to create a dressing and just dump everything into a bowl and mix. This Thai salad is a salad that I can eat every single day for breakfast, lunch and dinner and never get sick of.
This Thai salad is by no means an authentic recipe, it is one of those salads where I incorporated elements of Thai vegetables and peanuts and tossed together to create a dish that emulates Thai flavors.
Ingredients for Thai Salad
This salad is very customizable and you can swap out ingredients for any vegetable you like and can also omit the nuts and peanut dressing if you are allergic.
Additionally, this salad is naturally vegetarian. If you are gluten free, you can swap out the soy sauce in the peanut dressing with coconut aminos and you can omit the wonton strips as well.
If you are vegan you can swap out the honey in the peanut dressing with maple syrup or any sweetener of choice.
For this salad, I like to use the following ingredients:
- romaine lettuce
- red and napa cabbage
- tofu
- carrots
- red bell pepper
- cilantro
- mango
- peanuts (or any nut of choice)
- wonton strips
- peanut butter
- soy sauce
- honey
- lime juice
This is a crunchy and veggie packed salad!
My favorite part of this salad is the peanut dressing, it is what takes this salad to the next level! There is something about the combination of this dressing paired with these vegetables that make eating the vegetables so much more enjoyable.
